Wylie Dufresne is known as one of New York’s most pioneering chefs, the restaurateur who famously deconstructs eggs Benedict at his cult status WD-50 restaurant. Alder is his latest project, a restaurant conceived to be more a neighbourhood spot than a temple to gastronomy but where the Caesar salad is again deconstructed into a finger food mini buffet of pieces of nigiri, Spanish mackerel, romaine lettuce and a dab of eggy sauce.
