For his latest London eatery, chef-restaurateur Mark Hix called on Damien Hirst to create one of his signature formaldehyde sculptures to survey the warehouse-like space that is home to Tramshed. With a simply menu that features just three sharing starters, whole Woolley Park Farm free-range chicken or Mighty-marbled sirloin steak by the 250g, Hirst responded to the brief with a work that, of course, preserves a cow and cockerel.
