Like fine wine, the best Aceto Balsamico Tradizionale di Modena (ABTM) balsamic vinegar
is an art form of ageing and crafting. Those declared officially “Extravecchio” are aged in barrels of juniper wood for over 25 years. The balsamic in this lot was harvested in the 1930s.
